In a clean bowl, combine 1 teaspoon of sugar, ⅔ teaspoon of MSG, 5 teaspoons of Chinese black rice vinegar, 5 teaspoons of light soy sauce, 1 teaspoon of water, and 1 teaspoon of toasted sesame oil. Stir until evenly combined.

Cut 3 cucumbers, about 420 g in total, in half lengthwise. Gently smash each cucumber half with the flat side of a knife, taking care not to crush it too finely. Cut the smashed cucumbers diagonally into bite-sized pieces.

Finely mince 3 garlic cloves.

Transfer the cucumber pieces to a large bowl. Add the minced garlic, 2 teaspoons of the prepared dressing, ¼ teaspoon of MSG, ½ teaspoon of sugar, 2 teaspoons of toasted sesame oil, and ¼ teaspoon of salt.

Using a clean hand, gently toss and massage the cucumbers until everything is evenly combined. Transfer the salad to a serving plate, leaving as much of the liquid behind in the mixing bowl as possible.
