    optional: Cut along the back of each prawn to butterfly it, then remove the digestive tract. Keep the shells intact.

    Finely mince the garlic. Briefly rinse it under cold water to remove some of the sticky garlic juices, which helps prevent it from sticking or turning bitter during stir-frying. Drain thoroughly.

    Heat some cooking oil in a pan over medium-high heat. Add the prawns and pan-fry until the shells turn red and become lightly seared. Remove the prawns and set aside.

    Return the prawns to the pan and pour in 150 ml of beer. Add a small pinch of salt, 1/2 tablespoon of sugar, a little ground white pepper, and 1 tablespoon of oyster sauce. Bring to a boil and cook for 3 minutes.

    Increase the heat and reduce the sauce until it lightly coats the prawns.
